This is a perfect base for hot process. Just a low dosage of this base will give you a neutral flavor with an optimal structure. Use this base to get the perfect gelato.
This white powder with cream flavor has full solubility over 60° C.
Dosage: 35 gr per kilo. Hot process only
To get a creamier texture that lasts longer than normal, add 20 gr x kilo of Protolat which is a product designed to reduce crystallization.
